Loveable Lasagne!

Oh how I love carbs..I mean pasta! This is a delicious lasagne recipe that i like to think of as a tad bit healthier since i use cottage cheese and not ricotta. I promise even the manliest of men wont know the difference and will eat it up!


The bits and pieces:   
  • 1 (16 ounce) package lasagna noodles
  • 1/2 pound Hot Sausage
  • 1/2 pound lean ground beef
  • 1 (8 ounce) can tomato sauce
  • 1 (28 ounce) can crushed tomatoes
  • 1 tablespoon chopped fresh parsley
  • 3 clove garlic, crushed
  • 1/2 teaspoon dried oregano
  • 1/2 cup minced onion
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons salt
  • 1 pound cottage cheese
  • 2 eggs
  • 3/4 cup grated Parmesan cheese
  • 2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 pound shredded mozzarella cheese

Preheat oven to 375. Bring a large pot of lightly salted water to a boil. Add your noodles and cook till al dente. 

Place pork and beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in tomato sauce, crushed tomatoes, parsley, garlic, oregano, onion, sugar, basil and salt. Simmer over medium-low heat for 30 minutes, stirring occasionally. 


  In a large bowl, combine cottage cheese, eggs, Parmesan cheese, parsley, salt and pepper.

 


Once your noodles are al dente, pull them out and lay them on a sheet of oiled foil till your ready for the next step! You still want them a tiny bit hard.

This is a Picaso right here! All mine broke! oh well, try your best, it doesn't have to be pretty, just tasty!

 Then once your noodles are down you need to put half your cottage cheese mixture and then half your meat mixture, like so;
  

Repeat, noodles, cheese mix and meat mix until you are out!  
 
 





 Place Mozzarella on the top and throw this puppy in the oven!! This made so much i used 2 baking dishes and had left overs for days!


Cover with CHEESE (cause it's just yummy not to) and bake in preheated oven for 30 to 40 minutes. or until the cheesey top is brown and bubbling with yummyness! 


Then plate it up! Add some bread, cause what the hell, you are a human and you LOVE carbs!  Add a tiny little bit of something healthy like a salad so you can at least feel like your being good!
