Be still my beating heart...BLUEBERRY PANCAKE CUPCAKES WITH MAPLE -BACON BUTTERCREAM FROSTING

STOP EVERYTHING YOU ARE DOING AND READ THIS RECIPE!!!! :)

 It went a little something like this. Scrolling through the internet searching for something amazing to cook, bake, drink, listen to... and then WHAM! There it was! My 2 favorite things rolled into 1! Bacon and cupcakes! Zing! I had to do it! so here you go universe, get ready for the ultimate cupcake. This cannot be unseen!

Naturally, I had to mess with the recipe (BIG TIME) but i have a hunch you wont complain.

Ingredients:
For the Cupcakes
  • 1 cup all purpose flour (this was originally 2, but i had a brilliant light bulb over your head epiphany). Instead of using all this flour to make pancake like cupcakes why not throw in some actual pancake mix! 
  • 1 cup blueberry pancake mix
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar (I used splenda and i used 3 tablespoons)
  • 1 1/2 cups whole milk ( i used 2%)
  • 1 tablespoon salt
  • 2 eggs
  • 2 tablespoons unsalted butter, melted and cooled
 For the frosting.
  • 1 cup unsalted butter room temp
  • 2 1/2 cups powdered sugar
  • 3 table spoons maple syrup
  • 1 teaspoon vanilla extract
  • 3 slices of bacon, cooked and crumbled.

On a side note i know baking is supposed to be all about accuracy and precise measurement, but really, pancake cupcakes with bacon toppings, nothing is sacred! So just have fun with it and remember to taste test frequently. :)

First things first you need to preheat the oven to 400 and line a cupcake or muffin pan with liners.



Mix together the flour, sugar,baking powder and salt in a large bowl and set that aside. In your mixer combine milk and eggs and cooled butter then lightly beat. Then add in the dry ingredients to the mixer and mix to slightly lump still - Like a regular pancake. Pour into the cupcake liners and smile, cause you are about to embark on an amazing journey through breakfast and dessert.

 Bake at 400 for 10 minutes- check with a toothpick

While the delicious little cakes of happiness are baking you get to make the frosting!! Hooray!!!

Start with 1 cup of butter, add in the powdered sugar .. and then this is where i went a tiny bit crazy.
Add in your maple syrup and vanilla.

I did not do this as the recipe called for, I threw all measurements out the window...Just go ahead and pour in maple syrup, At first i used a table spoon but i was so excited about this concept in general, that eventually i just threw the spoon into the sink (actually onto the counter in a fit of joy) and poured gooey mounds of maple-y liquid into the mixer. :) I did the same with the vanilla and taste tested frequently till content with the results. If you are not a fan of just throwing stuff into a bowl and hoping it comes out great, you can use the recipe! (BORING)


So mix everything together until it becomes the consistency of frosting :) 




  Then check on your cakes! Just like pancakes they brown on the top! 
 Pull them out once cooked all the way through and let them cool on a tray! While you make some bacon!!! YES, I SAID MAKE SOME BACON!!!!!



 BACON!!!!!!!!!!!!!!! YAY!!!  :)

Okay sorry, got a little carried away!
Once your bacon is done crumble it into little pieces. Eat at least 3 pieces while doing this. Just because.

Now for the fun part!!!!!!!!! 

 Smear big manly spoonfuls of your maple-y frosting onto the pancake cupcakes! then ...SPRINKLE A GENEROUS HELPING OF BACON ON TOP!

Then EAT one like I did...okay 2..
